My goal is to find a profession that will fast track me through the emigration process in Canada. So, I need to know which skilled professions does Canada need the most or look for the most when considering emigration status.

There is a skilled worker program and information is available at the website mentioned above.
You might consider attending a Canadian university. It sounds like this will earn you points toward your application. Also, most student visas permit you to work part-time, which may get your foot in someone's door.
Consider also a NAFTA visa. That how I came to the U.S. The list of professions is more restricted, but the visa is quick to get, and renewable for 6(?) years.
