Does anyone have a really good Ragout recipe?
I have a bunch of pork hocks to use up, and I'm embarrassed to say, I'm not sure what to do with them. :oops: Ragout is one option. An other suggestions (complete with recipe) would be much appreciated.

I'd take a few hocks, cure them lightly and smoke them. Some can be turned to rillets, but I'd save a couple to make things like baked beans and stews or soups.

They might be somewhat difficult to eat by themselves, but are really good to flavour other foods.

Hence the ragout recipe search. :lol: My grandmother used to make it, but I can't find anyone that still has her recipe.
The rillets looks interesting though. Thanks. :)

If you read French, and I think you do... this looks pretty good for a porc hock only recipe.

This one includes meat balls and you can use your choice of meat to make them. I prefer this one since you use browned flour to make the sauce. Looks a lot like the one my mom used to make but she used to add chicken and sometimes cubed meat (whatever you want, at this point, including anything you hunt).

Ya know, I don't, but apparently I know enough basic words and phrases that I CAN actually muddle my way through a recipe! :lol:

Boil up your pork hocks with peeled and quartered potatoes. When they're almost done, bury it all with good quality sauerkraut.

Serve with hot mustard and copious amounts of lager. Some dark German bread would go with it, as well.

DAS IST GUT!
