Why the different date and traditions, care to explain?

The Orthodox/Eastern Europeans types go by the old Julian calendar, while the rest of the world uses the newer and more accurate Gregorian calendar. As for the different traditions, each country has their own Christmas traditions with related religious symbols. The 12 meatless dishes(fish is one of them) represent the 12 disciples of Christ. We used to have the 12 days of Christmas in the West, birth to epiphany(when the magi found Christ), but no more.
When and where I went to high-school, it was an unofficial holiday for Slav and non Slav alike. A choir from school would often go to the old folks home and sing traditional hymns and carols as well as serve the traditional orthodox meal to the elders. Unfortunately the fish was often sucker....yeeech.
