Well I'll focus on the drinks. No Canadian meal would be complete without a big mug of beer or bottle of Okanagan wine. And some Canadian rye whisky as well...

Poutine followed by something with bacon and maple syrup. I guess that's the stereotypical answer but I can't seem to put my finger on any other genuine forms of Canadian cuisine.... perhaps something made from either Bison or Moose meat? I know! Beaver Balls! Waiiiit a second...

Moose roast.. mmm.. delicious. Buffalo steak. Beaver, bear, deer... porcupine. Or a tribute to our Inuit forefathers: seal, beluga, etc... basically anything wild and meaty is Canadian.

My Edmonton-slanted list, based entirely on things I can't find in the states:

- poutine
- Grasshopper and other Big Rock beers
- tim horton's donuts and coffee
- foothills creamery ice cream
- donairs (an Edmontonian specialty, even if they're originally from elsewhere)
Mmmmmm...

Salt cod and hard biscuits with molasses (with a nice lager)
I'd have to go with the fiddelhead and wild garlic salad too, but add some Wild Rose hips (with a crisp Ontairo white wine)
Braised Bison in a glazed Rye whiskey sauce (with a deep full Okanagan Burgundy)
Roast breast of Grouse with wild mushroom wheat pilaf and fresh kernels of corn (with a Nova Scotia Montbeliard Pear wine)
Chocolate mousse with saskatoon berry syryp (and Ice wine)

Ok that does it. I'm coming to Quebec...

And how could I forget salmon? My dad's a fisherman!!! haha. So here's some more:
-moose jerky, steak, roast, burgers
-smoked steelhead (cold smoke & hot smoke)
-smoked cod
-BBQ chum
-teriyaki sockeye
-pine mushroom (the infamous & decadently expensive matsutake) miso soup
-salt salmon (chinook.. mmmm)

Funny, my dishes don't have any vegetables in them. I guess that's 'cause there are no farms in Northern BC.

Just wanted to add... this is a cruel topic to post when there are starving students such as myself on this board. My stomach's caving in and my mouth is literally watering haha... still coming to Quebec, though.
