I'm not defending Bezos at all... but companies can introduce new technology, change work conditions (hours, sick leave etc.), require workers get new certifications. Very rare will your union protect you from any of that except maybe for work conditions.
They can, but in Canada (maybe just ontario?) it might be considered a constructive dismissal and if the people want to leave they would have to pay severance. If they've been there for 5 years, that's 4-6 months.
Though I doubt this applies in the U.S.
