The torpedo doesnt actually hit the ship it blows up underneath, this creates a void in the water which breaks the ships back causing to break into two as in the video. A carrier will sink if struck by one due to its size and displacement in the water.
By the way they only have 500 kg of high explosive but the effect is magnified by the water.
