I usually do some sweet potatoes with maple syrup and grilled asparagus with olive oil, kosher salt and pepper.

Don't like sweet potatoes, nor asparagus ;-)

I'm with you on the sweet potatoes, but you don't like aspargus? [drool] And you need asparagus as a side for Beef Wellington, but not grilled. You need them for the mushroom-asparagus risotto you're going to make. Using mushrooms in both elements of the dish marries the whole plate together. But if you're gonna grill them, wrap them in some of that proscuitto you used for Wellingtons.

That might actually be a very good idea, but I will take the asparagus out... I will NOT, and I repeat, I will NOT EAT asparagus :P

You are the first person I've ever heard of that doesn't like spare-guts. Honestly.
The father in law could make superb beef wellington, every other person that tried the top was all soggy. Boy could he cook.
But he always added cockaleekie soup, mushy peas, bubble & squeak. Swore it was so his daughter would make me sleep out on the porch. Soon as we left their apartment I swear even the kids farted so hard they derailed the SkyTrain.
