And you need asparagus as a side for Beef Wellington, but not grilled. You need them for the mushroom-asparagus risotto you're going to make. Using mushrooms in both elements of the dish marries the whole plate together. But if you're gonna grill them, wrap them in some of that proscuitto you used for Wellingtons.
