My all time favorite: Asked about why no maple long johns in the store.
"We can't get maple right now"
In Canada? You can't get maple? How about those bottles of maple syrup and flavoring right there 5 feet across from you? By the sugar! The aisle of butter on the other side? You're the bakery manager and can't even make fucking icing?
I attribute 90% of shortages to lazy ass managers/employees who after 16 months haven't even tried to find alternate sources and suppliers. Just too easy to say no we can't because....

You're partly right, but if they take a bottle of maple syrup off the shelf, it costs more because it's retail, not wholesale price.

The reality is they can't get the same cheap, low quality shit they regularly use and don't want to use more expensive ingredients.

Most of the other shortages are due to just in time shipping, like the Wendover video I posted.

Most bakeries don't make their own stuff anymore, so they likely couldn't even if they tried.

AFAIC there are no more bakeries. Only reheat the premade frozen shit places.
And honest to God, I've yet to see an M1 Mac on the shelf of any store. I know people who've got theirs online within a week....
... or account for the fact the SaveOn never has fresh fish, just shrink-wrapped frozen in China crap even though the road here only goes to Prince Rupert. For years and years before Covid hit.

I'll have to agree to disagree with you both. While I don't disagree that some bakeries do use frozen pastries and what not (Costco for example sells cases of frozen croissants, apple strudels, cookies and other goodies you can take home and bake yourself), but there are a lot of grocery stores and real bakeries (Cobbs, Bon Ton, Hazeldean, Dutch Delicious, Bliss, etc.) in Edmonton if you look for them. Some of them, like Bon Ton, are pretty pricey, but higher quality goods always are.

Most of the grocery stores around here bake their own bread - the easier types anyways, things like baguettes are super time-consuming - and make a fair amount of their pastries. My sister is a bakery manager at Co-op and she couldn't keep up with the demand for bread and cakes last year - half an hour after she put out 100 loaves of bread, it was all gone!

If you can see in the back (like I can at my nearby Sobey's and Safeway), the Hobart mixer (a professional grade stand mixer) they have back there is proof that they are baking fresh goodies. Nobody invests $5,000 in a Hobart if they are only going to bake frozen crap.

The other trick is to avoid the pre-packaged cakes and pies in colourful boxes with ingredients on them - those all come in frozen and are thawed overnight in the cooler before going out on the shelf.

I was referring to the grocery store bakeries. I remember even Superstore, when I worked there, had a night crew on bakery who made lots of things over night. Now it comes in frozen.

And the Challa from Bon Ton is [drool]

Bon Ton owns. Best steaks and chicken in the Calgary area. The only other place that came close to having meat that good was back when DeBagi's had a few stores in town before they sadly went under.

Valley bakery and Fortuna in Burnaby BC are much missed. All the Italian pastries at my aunt's house.
So I move up North, it's over 160km to Prince George and that city's down to ONE bakery with few pastries. Usually have to make do with Costco stuff because it's normally s Sunday when we go into town. Just noticed the sheet cakes. muffins and such are half the size they were 2 years ago, the turnovers have turned to shit.

But this supply bullshit extends to everything. I always hit the computer Big Box places... just to check prices and to see if there's anything I haven't already got. Goddam 250GB SSDs were $89 - $119, I just got one for $39 on sale online, regular price $49. Almost all the desktops in stock were old 8000 series Intels, older Ryzens, etc. Half the display space was empty.
Even online computer stuff is affected. If anyone has AMD chips in stock, they're listed over MSRP. Even saw a USED 3600 on Amazon for double what I paid new.
The Apple M1 thing... the guy told me the real reason they don't have any is there's stock of old Mac stuff and they're not allowed to order until it sells.
So cut the fucking prices, clear them out and swallow your losses. Part of running a business FFS. The idea of knocking $50 off an old $3000 Macbook just isn't gonna work.

Is the Mennonite bakery still around? That place was the best.
