Making my usual batch of chicken stock after a roast chicken dinner on Wednesday. It still needs a couple more hours of simmering then some for soup for lunch tomorrow and freeze a container for another day. The only difference this time is using fresh picked Italian parsley grown on our deck! Plus of course, all the usual veggies & other herbs to make it yummy.

A Tortilla topped with pepperoni, yellow pepper, Portobello mushrooms and cheese... broiled in the oven and served with Tzatziki sauce.

A couple of nights ago I made what my bf described as the "best you've ever made!" baked macaroni & cheese. I used cheddar & swiss in the cheese sauce and added chopped up broccoli & ham, topped with a seasoning blend and panko crumbs and more cheese. It must have been good as there were no leftovers. :lol:


Tonight I'm making a pork and multi-veggie stir-fry and trying out a new sweet & sour sauce.

We've been on a wrap kick lately as anything to avoid using the oven is great.

Last night we had wraps with boneless chicken thighs panko (original & whole wheat mix) coated and pan fried with shredded cheese, local butter lettuce and guacamole that I put some of our chopped-up cherry tomatoes in. Very [drool]

A bunch of different salads. Apple with fennel and mint. Pasta with fresh peas and baby carrots. A daikon radish and carrot with fermented chile based dressing.

But desert! [drool] Haskap berries in the best ever cottage cheese and sprinkled with maple sugar.

A local bakery that we frequent sometimes gives out samples of their products when you purchase a couple of items. They gave us a couple of slices of their focaccia bread last week and damn if it wasn't incredible enough that we bought a (albeit small) loaf of it which lasted all of 2 days. Just enough olive oil and herby stuff on top to make it [drool] . They shouldn't be allowed to make stuff that damn good. :lol:

I grew up in Burnaby and just heard Venice Bakery is closing down after over 50 years. Every wedding and event for the whole damn extended family included their goodies.

Sad day, after 35 years of the soggy frozen & reheated bakery goods in northern BC, I can't even go 'home' for a good treat!

A simple yet satisfying dinner tonight with a pan-fried bone-in centre cut pork chop, red nugget potatoes topped with cottage cheese and a side salad of local veggies and, of course, our tomatoes.

That's the one. We'd drive down to Vancouver to visit my Aunt, she'd always put out a late night spread of salami, cheese, olives, Valley Bakery buns and pastries. My daughter still talks about those visits.
I've found nothing so good in 35 years around Prince George (hell - in the whole Area code 250. I still tell people "Area 259 is beyond Hope)

We sometimes buy bread, buns and pastries from Cobs Bread and they do have 2 locations in Prince George. They aren't a full bakery in that no cakes or things like that though.

It's always sad when a place you love and frequent shuts down though. I can think of a few restaurants and stores that have vanished over the years that just haven't been replaced by something similar.
